| Whoever said that most great chefs hide their best tricks and never betray some special secret ingredient in a recipe just have not met superstar chefs Jean Pierre Parant and David Griswold. These two innovative Austin chefs have bottled and sauced all their cooking secrets and launched an imaginative line of gourmet products deliciously designed to elevate pedestrian dishes to extraordinary flavor heights. Hallmark of their TexaFrance line of top drawer condiments, pasta sauces, mustards, pestos, chutneys and jellies is that each batch is meticulously prepared and personally tasted by the talented team in the Austin test kitchens.
Parant and Griswold are part of a new breed of imaginative, talented chefs emerging on the cuisine scene who believe freshness is the most important criterion in creating fabulous food. Both chefs earned college degrees in other fields before entering the highly competitive culinary field. The Canadian-born Parant racked up an impressive list of culinary credits as food and beverage manager of a number of hotels across America. He was a cooking school instructor, a TV and radio talk show host, a deli owner and restaurateur before pooling his skills with Griswold at TexaFrance.
The Texas-born Griswold had both a B.A. and B.S. degree before he got his degree in hotel and restaurant management at the prestigious Hilton Hotel and Restaurant Management College at the University of Houston. Besides apprenticing his way through the kitchens of some of this state’s first-rate restaurants, he also formed and ran three very successful service-catering companies. Two years ago the chefs merged their talents in their gourmet food production company.
Profession chefs, like the Austin duo, do more than simply cook. They’re constantly developing and perfecting timesaving methods to create dishes more quickly without sacrificing a wit of the flavor and beauty of food. To showcase their talents there up-and-coming culinarians created the Texafrance gourmet line of products that they claim “is akin to having a sous chef on your shelf.”
If you want to see if you can add a touch of their “sous chef magic” to you cookery, for starters, you might want to pick up a bottle or two of the company’s Roasted Garlic Essence at the supermarket.
